Der Pizza Stein wird in eine (idealerweise die Firebox-Pfanne entsprechender Grösse ...;-) ) Pfanne eingelegt, verteilt die (niedrige) Hitze des Kochers gleichmässig über die gesamte Fläche. Dadurch werden beim Backen in der Pfanne Hotspots vermieden und ermöglicht das Backen auf der dafür idealen niedrigen Kochertermperatur.

Ausser Pizza könnne in der Pfanne damit auch Brot, Fladenbrot, Kuchen, Cookies, Biscuits, cinnamon rols und vieles mehr gebacken werden.
